The Italian Association of Food Technology (AITA; www.aita-nazionale.it ) is the major food technical and scientific association and represents since more than 25 years the reference for the diffusion of the knowledge. The main site is located in Milan and are active sections in Parma, Verona, Viterbo/Rome and account more than 1500 members spread across the food companies and the academic institutions (Universities, Research Centres, ASL, etc); its mission is the technical formation of the food operators
